–baking seminar tomorrow at Parc Raday
THE National Milling Company of Guyana Inc. (NAMILCO), in collaboration with Seaboard Corporation, USA and Engrain LLC, USA will be hosting a Baking Seminar tomorrow from 08:00hrs. to 16:00hrs at Parc Rayne, Rahaman’s Park, East Bank Demerara.Its main objective is to give local bakers an opportunity to learn new techniques to further enhance their baking skills; to learn about the latest developments in the global bread industry; and to learn about creating niche products to bring variety to the consumers.
We will also focus on Good Manufacturing Practices (GMP).
The presenters are both specialists in the baking industry with experience stretching across North and South America..
Mr. Miguel Galdos is based in Chile, South America, and provided services in nearly all countries of this continent.
Mr. Keith Clemens, a graduate of the “American Institute of Baking” is attached to Seaboard Corporation, Namilco’s head office, and has experience in the baking industry for over 25 years covering Africa, North America and the Caribbean.
Some areas to be covered are:
– Review of baking process with emphasis on the relation of good manufacturing practices and final baking results.
– Functionality of baking ingredients and the relation with baking performance and final product.
– Mixing and Fermentation: Dough development , relation between mixing and fermentation and different mixing techniques
– Preferment: Types and advantages for the baker.
– Sweet Goods (types, ingredients, makeup procedures)
– Bakery Item Trends (What’s hot around the world)
Bakers will also get the opportunity to have one-on-one discussions with the presenters at the cocktail reception immediately after the seminar.

The Seminar will be opened by the Hon. Minister of Agriculture, Doctor Leslie Ramsammy who will touch on some innovative ideas . Mr. Brent Hardt, the US Ambassador will also make a presentation.
